Oatmeal Chocolate Orgasm Cookies
Original recipe by Great American Home Baking; gratuitously tweaked by yours truly.
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 cup (2 sticks) softened butter
1/2 cup firmly packed brown sugar
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups old-fashioned rolled oats
1 1/4 cups semi-sweet chocolate chips
Instructions:
Mix together flour, baking soda, and cinnamon in a large bowl.
Beat together butter, brown sugar, and granulated sugar in a second bowl until light and fluffy. Beat in egg and vanilla.
Beat flour mixture into butter mixture until blended. Fold in oats and chocolate chips, cover with plastic wrap, and chill for 1 hour.
Preheat oven to 350 degrees Fahrenheit. Grease 2 baking sheets.
Shape dough into 1-inch balls. Place cookies 2 inches apart on prepared baking sheets, flattening each cookie slightly.
Bake until lightly browned around the edges, about 10 to 12 minutes. Transfer baking sheets to wire racks to cool slightly. Transfer cookies to racks to cool completely.
Important notes:
Feel free to go wild with the cinnamon - there can never be too much.
You really do have to chill the dough for an hour, and you really REALLY do have to make sure that your baking sheets are cool before putting dough onto them. This is especially necessary, because if you put the dough onto hot cookie sheets you'll end up with flat and unappealing cookies instead of chunky and delicious cookies. I stick mine in the fridge for a few minutes between batches; it's very effective.
Smart people double this recipe. I, being un-smart, do not. Witness my foolish ways. Even the strictest and most iron-willed dieters are rendered powerless by the luscious siren song of these cookies. They'll disappear very quickly. Make lots.
Lastly, give in to temptation. Don't try to resist the chunky chocolate goodness; it's a losing battle. Just keep tell yourself that the oatmeal is good for you and you might escape years of expensive therapy.
